Ingredients
For Cake
- 1 cup semolina (sooji/Rava)
- ½ cup granulated white sugar
- ¼ cup whole wheat flour
- 1 tsp cardamom powder
- 1 cup curd or yogurt
- ½ tsp saffron
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp baking soda
- ¼ cup ghee (clarified butter)
- ¼ cup milk
For the Glaze
- 2 tbsp castor sugar
- ¼ cup chopped pistachio
- 2 tbsp lemon juice
Recipe
- Mix semolina and sugar in a blender. Mix for a couple of times and make a powder.
- Include flour, salt, baking soda, and baking powder to the semolina mixture. Combine all well.
- Include curd and blend utilizing a spatula to make the batter. Put it aside till it softens.
- Line an 8 inch round cake baking container with butter paper or parchment paper. Grease it with oil or butter—Preheat the oven to 180 degrees C.
- In another blending bowl, include milk, cardamom powder, saffron, and ghee. Whisk utilizing an egg blender for a couple of minutes.
- Include soaked semolina in batches to the liquid blend. Delicately cut and overlap the batter in a direction until well mixed. Do not blend it for a long time.

- To decorate the cake, pour lemon glaze over the cake. Sprinkle slashed pistachios on the top.
- Serve eggless Rava cake with a scoop of vanilla or coconut ice cream.
Recipe Notes
- Ensure all the ingredients are accurately measured according to the recipe mentioned above and are at room temperature.
- Try not to whisk the cake batter for a long time after including the flour. When all the ingredients are joined well, and the batter is smooth, get your hands far from the batter.
- Try not to pick a baking container over 9 inches in size for this cake as the cake will expand.
- To check the cake if it is baked or not, insert a toothpick in the middle of the cake and see that if it comes out clean or not. If the cake is browning a lot from the top, cover the top with aluminum foil during the baking process.
- Do not apply the glaze directly after taking out the cake from the oven. Let the cake cool off completely on a wire rack before beginning with the lemon glaze.
- Store the Rava cake in the fridge. Make sure not to leave it at room temperature for more than 2 hours, particularly in the hot climate and humidity.
